Make blackberry, lemon and thyme jam using freshly picked berries and herbs from the Sweet Life Garden! Alisa shows you how to make a simple and delicious recipe for refrigerator jelly! She also shares how the Sweet Life logo became purple and tells you the story this year about the caterpillars and the parsley! 🙂 This jam really puts on a show with the variety it can make in your recipes. Use it as a topping for a lemon and ricotta pancake, or as a drizzle over a grilled chop…its also a fantastic add on to a buttermilk biscuit or over your favorite ice cream.
You will need:
2 cups of fresh blackberries
1 lemon squeezed
4 sprigs of fresh thyme
1/2 cup AC vinegar
1 packet of pectin
3 cups sugar
Combine on the stove the vinegar, sugar, lemon juice until it’s dissolved
Add the berries and allow to cook and break down… keep stirring it so it does not burn!
Now add the pectin and thyme and let that go until it gets completely mixed together.
Pour the jelly into the sterilized jars and seal them with the lids
Let them cool on the counter and then place in the refrigerator
This keeps for several months but I do not think it will last that long since it’s gone about as fast as I can make it! LOL
