What you need:
1 lemon zested
1/2 Tablespoon of Vanilla
2 tablespoons of fresh thyme leaves
2 cups of figs
1 1/2 cups of sugar
1 packet of pectin
1 tablespoon of lemon juice from the bottle
What you’ll do:
Zest the lemon into the pot
add vanilla and thyme
drop figs into pot with the sugar and set on stove to cook down the fruit
add pectin and 1 full tablespoon of lemon juice
Pour preserves into the jars using a ladle and be careful to not get it onto the surface of the jars and leave 1/2 inch headspace
place lids and tops onto the jars and place in the hot water bath for 30 minutes. Pay attention to your altitude and reference the Ball preserving charts for your area. Once finished use your jar tongs and place on a towel separating the jars by at least 2 inches to cool.
Prepare the jars and lids and sterile them
Keep a pot of hot water on stove
