What to make for Thanksgiving! Easy Side/Texas Corn Pudding

Hey there Sweet Lifers! What do you want to make for an easy Thanksgiving? Texas corn pudding is a wonderful addition to any feast and this year it’s also something easy and affordable that everyone will just love. If you want to kick it up a bit you can add some pepper flakes or a chopped jalapeño. I did not include that in this episode because I was cooking for some children that can’t take the heat! LOL

Here’s what you’ll need:
Cut fresh corn off the cob (apron 5 ears) or canned corn will do as well and I would in that case use shoepeg corn 3 cans
2 cups of heaven cream
2 egs
teaspoon of nutmeg
1 teaspoon each of pepper, salt, garlic and then
1/2 of jalapeño pepper
3/4 cup of crushed crackers
1/2 cup of sharp cheddar cheese
3 tablespoons of melted butter
another cup of crushed crackers
spot of paprika for sprinkling and color

What you’ll do:
Add to your bowl the cream and eggs and spices and then fold in the corn and crackers
pour into a greased pan and then top with cheese and melted butter and more crackers, toss a dash of paprika
place in a 350 degree oven for 45-50 mins
